In sourcing and choosing ingredients

Since 2001, and it seemed so complex at the time, we've been offering organic and fair-trade coffee, and we continue to concoct our seasonal menus based on Quebec products on the market. In fact, we're a member of the Aliments du Québec au menu program, which promotes the local economy. We also give preference to food produced in harmony with the planet. To this end, we carefully monitor the list of endangered species drawn up by Greenpeace. For example, we avoid cooking with bluefin tuna.


Inside our kitchen

Our processes are designed to reduce our carbon footprint. For example, we have equipped our kitchens with air-compression systems, and we have also redesigned the layout of our kitchens to include recycling and compost bins. With this organization, we are able to cook only what is required, thus avoiding food waste.

Our actions evolve with time and government decisions. Every month, we redefine our food circuits, giving priority to short distribution channels. Every day, thousands of eco-actions are carried out by our in-house staff (sorting, turning off lights, etc.).


In our product packaging

Our boxes and meal bowls are already compliant with City of Montreal and Government of Canada regulations. All our utensils are also compostable. Thanks to this commitment, we were rewarded with the Quebec Corporate Citizen of the Year award from L'Actualité magazine. Since then, we've also been offering 100% recyclable aluminum water cans. This is a more ecological alternative to plastic water bottles.


In our workforce and partners

Sustainable development also involves the people around us. Since 2008, our agreement with the community organization Resto Plateau has enabled us to offer training to immigrants undergoing social and professional reintegration. We trained them in culinary techniques, and they enriched us with their culture. It's a memorable human adventure that will long remain part of our corporate culture.

And every week, we build a network of partners and service providers who share our environmental values.


And then, quite humbly, tomorrow

We are aiming for carbon neutrality by 2030. We take a clear-eyed look at our ecological contradictions and know that we still have some way to go. To this end, we are working with an external body to understand what we are doing well and what we need to improve, while making no compromises on the quality of our services.

Reducing emissions from our deliveries

In 2023, we offset our climate footprint on deliveries by 97.66 tons of CO2.
