Best practices for the food transition

In the sourcing and choice of ingredients
Since 2001, and it seemed so complicated to us at the time, we have been offering you organic and fair trade coffee and we continue to concoct our seasonal menus based on Quebec products on the market. Moreover, we are part of the Aliments du Québec au menu program to promote the local economy. We also favor foods whose production is in harmony with the planet. To this end, we carefully follow the list of endangered species established by Greenpeace. For example, we avoid cooking with bluefin tuna.

In our kitchen
Our processes aim to reduce the carbon footprint. For example, we have equipped our kitchens with air compression systems and we have also revisited the kitchen layout to equip them with recycling and compost bins . With this organization, we are able to cook only what is requested , thus avoiding food waste.
Our actions evolve over time and in line with government decisions. Every month, we redefine our food supply chains by favoring short supply chains . Every day, thousands of eco-friendly actions are carried out by our internal employees (sorting, turning off lights, etc.).

In the packaging of our products
Our lunch boxes and bowls already meet the regulations of the City of Montreal and the Government of Canada . All our utensils are also compostable. Thanks to this commitment, we were rewarded by obtaining the Quebec Corporate Citizen of the Year award from L'Actualité Magazine . Since then, we also offer 100% recyclable aluminum water cans. This is a more environmentally friendly alternative to plastic water bottles.

In our workforce and our partners
Sustainable development also depends on the people around us. Since 2008, our agreement with the community organization Resto Plateau has provided a trial employment environment for people far from the job market who are currently seeking social and professional integration. In this way, we have contributed to their training in culinary techniques, and they have enriched us with their culture.
It is a memorable human adventure that will remain anchored in our corporate culture for a long time.

And then, very humbly, tomorrow
We aim for carbon neutrality by 2030. We look lucidly at our ecological contradictions and know that we still have progress to make . In this sense, we collaborate with an external organization to understand what we do well and what we should improve while making no compromise on the quality of our services.

Reducing emissions from our deliveries
In 2024, we offset our climate footprint on our deliveries by 32.54 tonnes of CO2.
